We had a fun time celebrating my husband’s birthday this weekend. We enjoyed a low-key, festive night of dinner and games with family. While some recommend never trying new recipes when cooking for guests, I think it can be a great opportunity for feedback- especially family, they make good guinea pigs! When trying new recipes for guests, I always incorporate a few recipes previously tested and approved. That way if one dish isn’t a success, there will be plenty of other yummy food. However that was not our experience, consensus was all the dishes were delicious. Enjoy!

Coconut Crusted Sole with Mango Salsa – Baked on parchment paper made for an easy clean-up.
Eggplant Caponata – Since my son is not an eggplant fan I added zucchini to the dish. Next time I will also add red onion.
