Carrot Apple Skillet Hash

I discovered this recipe the first time I participated in the 21 Day Sugar Detox Program.  While it is compliant for most detoxes, you will find yourself making it even when you are not detoxing.  My recommendation is to make a double batch as you will want to eat it morning, noon and night!


  • 2 tablespoons coconut oil
  • 4 carrots, peeled & shredded (approx. 2 cups)
  • 1 green apple, peeled & shredded (approx. 1 cup)
  • 1 pound of organic ground turkey or chicken
  • 1-2 tablespoons of sausage spice *see recipe below
  • salt & pepper to taste

Sausage Spice Seasoning

  • 1 teaspoon sea salt
  • 1 tablespoons ground fennel seeds
  • 1 tablespoon ground sage
  • 1 tablespoon granulated garlic
  • 1 tablespoon onion powder
  • 1/4 teaspoon white or black pepper
  • 2 teaspoons dried parsley

Over medium heat, melt coconut oil in sauté pan.  Add the meat and sausage seasoning to the pan.  Breaking up the meat and stirring occasionally.  Continue cooking until there is no more pink in the meat (i.e., cooked all the way through).  While the meat cooks, peel and grate the carrots and apple.  The quickest way is with a food processor.   Once the meat is cooked, taste and add additional seasoning, salt and pepper if needed.  Reduce the heat to medium-low, add in the carrots and apple.  Stir to combine, cover and continue cooking until carrots are tender (between 5-10 minutes).  Remove the lid and allow any remaining liquid to evaporate.  Enjoy!
