What’s for Dinner?

Whenever possible, I like to stay home on snow days. Yesterday was one of those days. So when it came time to think about dinner, I needed to use ingredients I had in the house.  I also wanted it to be compliant for my Sugar Detox Group. The results – a one pot meal that got two thumbs up from the whole family, and leftovers for lunches. Winning!

Ingredients

  • Grated cauliflower rice (approximately 4 cups)
  • One pound of ground beef
  • Half of a yellow onion, diced
  • 1-2 carrots, grated
  • 1 cup of broccoli, chopped (I usually use fresh but always keep some frozed that can
    I can add to stir fry, one pot meals, etc.)
  • Grated ginger, about 1 inch (I keep some frozen and just grate as I need it)
  • 2 teaspoons 5 Spice seasoning  -or create your own (Star Anise, Peppercorn, Cloves, Cinnamon, Fennel)
  • Coconut aminos- these is a great soy sauce substitute
  • Salt and pepper to taste

Directions

  1. In a soup pot, brown ground beef
  2. Add in diced onion
  3. As onion become translucent, add carrots, cauliflower rice, grated ginger, and 5 spice seasonings
  4. Stir to combine and place lid on pot for veggies to cook
  5. Add broccoli, coconut aminos and stir to combine
